Kitchen Sink Muffins

Featured at the CDA Regina Expo on May 14, 2016.

Ingredients

  • 2 c. flour
  • 2 tsp. whole wheat flour
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • pinch kosher salt
  • 2 c. carrot, grated
  • 1/2 c. raisins
  • 1/2 c. walnuts
  • 1/2 c. shredded unsweetened coconut
  • 1 c. apple, grated
  • 3 eggs
  • 1 c. canola oil
  • 1 c. honey
  • 1 tsp. vanilla

Instructions

  1. Pre-heat oven to 325 degrees.
  2. Combine first 5 ingredients and whisk to combine. Set aside.
  3. Combine eggs, oil, honey, and vanilla. Whisk to combine. Set aside.
  4. Add the grated carrot, raisins, walnuts, coconut, and grated apple to the dry ingredients. Mix just to combine. Add the wet ingredients and mix just to combine. Portion accordingly (depending on the size of muffin tins being used) and bake at 325 for 12 to 25 minutes (again, according to size of tins being used).
